Za’tar, also known as thyme, is harvested and dried by women in rural communities in the Jenin District in Northern Palestine. Dried thyme is grounded, then sumac, roasted sesame seeds and salt are added. It is believed that this particular spice mixture makes the mind alert and the body strong.
