Our olives are handpicked, crushed and traditionally pickled. Our farmers use water, salt, pepper, olive oil and lemon for pickling green olives. These olives are the same olives used to produce olive oil. Black olives are pickled differently. They are preserved in virgin olive oil giving black olives a different flavor and a softer texture. The olives are very tasty and have good nutritional and health values. Black olives are kept on the tree to ripen and get darker in color. They are then picked and salted until they become pickled and tasty.
